Good double mesh

You want to use a "double mesh" strainer to strain eggs for Eggs Benedict. You lose too much white with the single mesh strainers. Chef Jean Pierre's words, not mine. (He's right, by the way)

Functional, but will it Rust?

This could be an excellent strainer, with a bit more attention. It is all stainless ...maybe. The rim appears to be a magnetically responsive steel alloy. "Stainless" is a term that encompasses many alloys, some of which are indeed magnetic. The tightly folded rim secures the screen, and also forms a liquid trap. In time, rust would allow the screen to loosen. The fine screen is indeed double. The rim is a true 5" OD. The handle is comfortable and is flat where it contacts rims. The hooked resting ear is also flat, so the strainer sits nicely and does not slide. On the one that I received, the resting ear is askew, and not inline with the handle. Aesthetically antagonistic perhaps, but not askew enough to cause instability. The rim join weld, and some other manufacturing artifacts are clearly evident. Although not stellar QC it is better than many, and the functional aspects of this tool are promising. Considering the cost, I would recommend this product.

Perfect for quinoa!

I bought this specifically for rinsing quinoa. It's excellent. Never lets any pass through. No rusting. I make quinoa every other day! So I use this constantly. My secret to the best testing quinoa is the double rinse. Rinse first, and while rinsing, rub the seeds between your fingers to help remove the saponins. If you're really sensitive, you could also try a second rinse halfway through your cooking time. I do it every time. I've prepared it for people who said they didn't like quinoa, but they like my quinoa. And I don't even season it! This just gives you the purest tasting, neutral quinoa.

CAPACITY LEVEL LOW

The 10" Strainer is as stated 10" in diameter, however, I have an 8" Strainer that is deeper than the this 10" Strainer. Although the 10" is Wider, because the depth is less than the 8", I just received the 10" so I am not sure if the amount of food that fits in both strainers would be the same. but it appears so.

Easy to use and cleans very easily. Sturdy. Best strainer I ever purchased.
